    Bakery Operations Manager – Full Time

    Salary: per annum - £37,440

    About Us

    Mamoosh Bakery was established in 2015, specialising in artisan pitta bread. Our founder, Einat, began baking at home and selling to friends before moving to farmers' markets. From there, we’ve grown into a successful wholesale bakery. In 2020, we opened a deli on site, and in 2024 we expanded again, relocating the deli to a new location and developing two thriving branches of our business.

    We have a strong, stable team of eight bakers and bakery assistants who tend to stay with us long-term. We value work–life balance — our bakers don’t work excessive overtime, and our shift patterns are people-friendly.

    Currently the bakery operates Monday to Friday, with the day shift starting at 4–5am and the night shift ending at 1am. Our loyal customers include independent shops, cafés, restaurants, distributors, pubs, private schools, and seasonal street-food vendors.

    About the Role

    We’re looking for an experienced and proactive Bakery Operations Manager to oversee daily production, maintain exceptional quality standards, ensure food safety compliance, and lead a skilled team in a busy artisan bakery.

    The ideal candidate is a hands-on, organised, and a people-focused leader who thrives in a fast-paced environment and is passionate about great food and continuous improvement.

    Key Responsibilities

    Operations & Production

    ·       Oversee day-to-day bakery operations, including production planning and scheduling.

    ·       Ensure consistent product quality and compliance with food safety standards (HACCP, SALSA).

    ·       Monitor stock levels, order raw materials, and minimise waste.

    ·       Maintain production equipment and a safe working environment.

    ·       Implement and monitor Standard Operating Procedures (SOPs).

    ·       Manage costs, labour, and performance KPIs to achieve operational efficiency.

    ·       Collaborate with the office team to meet demand and delivery deadlines. 

    People Management

    ·       Manage, train, and support bakery staff to ensure an efficient workflow and high morale.

    ·       Inspire and develop your team through regular, constructive feedback.

    ·       Lead performance and capability management using both informal coaching and formal processes, partnering with People Partners to ensure fairness and consistency. 

    Quality & Improvement

    ·       Champion continuous improvement and lean manufacturing principles.

    ·       Uphold and enhance our reputation for artisan quality and consistency.

    Essential Skills & Experience

    ·       Strong understanding of food production, ingredients, and product quality standards.

    ·       Knowledge of food safety and hygiene regulations (HACCP, SALSA, BRCGS).

    ·       Experience managing a bakery team or food production operation.

    ·       Excellent organisational and scheduling skills.

    ·       Effective communication and leadership abilities.

    ·       Competence with Microsoft Office (Excel, Word, Teams).

    ·       Hands-on problem solver with attention to detail and commitment to quality.

    ·       Experience with production management or inventory software.

    ·       Health & Safety and Fire Safety training.

    ·       Knowledge of lean manufacturing or continuous improvement techniques.

    Desirable Skills & Experience

    ·       Bakery or food production qualification (desirable but not essential).

    ·       Financial awareness — understanding costing, waste control, and profit margins.

    ·       Experience managing supplier relationships and logistics.

    ·       Familiarity with artisan or wholesale bakery environments.

    Hours

    Schedule: Full-time, Monday to Friday

    Hours: Day shift staggered starts at 4–5am, ends at 3pm

    night shift staggered starts at 3pm and ends at 1am
